Sodium benzoate works best for low pH food, ideally those with pH of 3.0. Here is the % benzoic acid active at certain pH levels.

pH % of active benzoic acid
3.0 = 94.0
4.0 = 61.0
5.0 = 13.7
6.0 = 1.55
7.0 = 0.0
